Recipe of the Week
We are only ONE DAY away from the first Farmers Market of the season (and yes, we are aware the weather looks intermittent, but we will perservere RAIN or SHINE!). Here's our Recipe of the Week: Overnight Oats with a Mixed Berry Compote! This recipe is a perfect breakfast for on-the-go families as all the prep is done in the evening. Parents- only a few weeks of school left! You can do it!!
Overnight Oats:
1 1/2 cups steel cut oats
4-5 cups milk (can use almond milk as a substitute!)
2 tbsp chia seeds
1 tsp ground cinnamon
dash of salt
Mixed Berry Compote:
1 cup fresh raspberries
1 cup fresh blackberries
1 cup fresh blueberries
5 tbsp orange juice
1 tbsp granulated sugar (optional!)
lemon zest
Add overnight oat ingredients into a slow cooker, stir, and set on low overnight (we recommend using a slow cooker for this recipe). To make the compote, add berries, juice, and sugar in a saucepan over medium heat. Stir frequently and reduce for 10-15 minutes or until the juice from the berries has been released. Top with lemon zest and stir. Remove mixed berry compote from heat and pour into a bowl. Refrigerate once cooled.
In the morning, serve the mixed berry compote over your warm oats and enjoy!
