Recipe of the Week - Father's Day Edition
This Sunday is Father's Day- and what better way to celebrate Dad than with a BBQ surrounded by those who love him most? And if you were to ask my dad what his favorite part of the BBQ is - besides the ribs, of course- it would be the dessert! We take dessert seriously in our household, and it's become almost a competition to who can make the best dish. This week, we're featuring an EASY to make six-ingredient Blackberry Cobbler. You read that right. Six ingredients. And if you pair this with vanilla ice cream or fresh whipped cream, you would win the dessert game hands down. So surprise Dad with this sweet dessert on Sunday to claim your role as the "favorite" in the family.
Six-Ingredient Blackberry Cobbler
1/4 C butter, melted (plus only a little extra for greasing the pan)
1 1/4 C sugar
1 C flour
1 C milk
3 C fresh blackberries
fresh lemon zest to taste
Preheat your oven to 350 degrees and grease the baking dish with your extra butter. In a bowl, whisk together melted butter, flour, milk, and 1 cup of the sugar. Set aside the other 1/4 cup sugar for the berries, as well as the fresh lemon zest. Pour batter into the baking dish and set aside. Rinse and pat dry blackberries, then sprinkle them evenly across the top of the batter. Take the remaining 1/4 cup of sugar and lemon zest & evenly distribute over the top of the blackberries and batter. Bake for 45-55 minutes or until the cobbler is golden brown and bubbly. Serve warm with vanilla ice cream or with fresh whipped cream & ENJOY!
