Recipe of the Week - Goat Cheese Stuffed Tomatoes
Happy Farmers Market Thursday, friends! This week, we chose to make oven-roasted goat cheese stuffed tomatoes! You read that right, GOAT CHEESE stuffed tomatoes. These are the perfect side dish to pair with grilled salmon or a grilled ribeye steak, and they're incredibly simple to make. So add a little spunk to your next dinner party or bbq by offering up these stuffed tomatoes!
Ingredients:
10-12 vine ripened medium tomatoes
1 pound fresh goat cheese
1 large egg
2 garlic cloves, minced
3 tbsp fresh basil
1/4 C extra virgin olive oil
salt & pepper to taste
Preheat your oven to 425 degrees. Remove the tops of the tomatoes and set aside. Core the inside and place inside baking dish allowing the tomatoes to stand. In a separate bowl, mix the fresh goat cheese (we suggest visiting Cheese Central or Tres Bien Creamery tonight during the market!), egg, basil (also available tonight during the market), garlic, olive oil (have you stopped by Olive Drop or Olio Verdad during the market!?), and salt & pepper. Spoon the goat cheese mixture into the hollowed tomatoes and place the tomato tops back on. Drizzle olive oil over the tops of all the tomatoes and bake for about 30-35 minutes, or until the tomatoes are tender with a few brown spots. Let sit for 10-15 minutes before serving and ENJOY!
